Toffee Pudding by the recipe of food stylist, Lovoni.

For making toffee pudding you need the following ingredients:
1 1/4 cups pitted and chopped dates
1 1/4 cups water
1 teaspoon baking soda
1/2 stick softened butter 1/4 cup / 60g
3/4 cup packed dark brown sugar
2 large eggs
1 cup self-rising flour self raising flour

Toffee sauce
2/3 cup butter
2/3 cup heavy cream
2/3 cup packed dark brown sugar

How to make sticky toffee pudding?

Grease and line a deep, round cake pan with parchment paper. Combine dates and water in a medium-sized saucepan. Bring to a boil over high heat. Add baking soda and stir – the mixture will froth. Remove from the heat and let cool for 15 minutes. Preheat the oven to 350°F (180°C).
Place the date mixture, butter, sugar, eggs and flour into a food processor; blitz until smooth. Pour the batter into the prepared pan. Bake for 45 to 55 minutes until browned and at this stage you can spread a little of the sauce over the cake if you desire. Let stand in the pan for 30 minutes before turning out onto a cake rack. Serve warm with toffee sauce.

How to make the toffee sauce:
Combine all ingredients in a small saucepan. Stir over medium heat until butter is melted and sugar is dissolved. Bring the mixture to a simmer and let simmer for 2 minutes. Serve warm over warm cake.
